Spicy Peanut Sauce and Chicken Skewers

This is a great recipe - and it's very healthy as well. I've used this in lettuce wraps with celery carrots and chinese noodles or over rice or just as an appetizer.

Peanut Sauce:
1 Tbls shallot, minced
1 Tbls ginger, minced
1 garlic clove, minced
1/2 tsp curry powder
1/4 tsp crushed red pepper
3/4 cup chicken broth
1/3 cup creamy peanut butter
2 Tbls lime juice
2 Tbls soy sauce
1 tsp brown sugar
1/4 tsp salt

Coat large skillet with cooking spray. Add shallot, ginger and garlic - saute for 3 minutes. Add curry powder and red pepper - saute for 1 minute. Stire in remaining ingredients. Simmer 3-5 minutes or until mixture thickens. Transfer to bowl and chill at least 2 hours.

Chicken & Marinade:
3 chicken breasts, cut into strips
1/2 Tbls ginger, minced
1 garlic clove, minced
1/4 tsp crushed red pepper
2 Tbls lime juice
2 Tbls soy sauce
1/4 tsp salt
2 Tbls sesame oil

Mix all ingredients except chicken in plastic sealable bag. Add chicken and refrigerate 1-2 hours.

Soak skewers in water for 30 minutes. Preheat broiler. Remove chicken from marinade and thread on skewers. Broil 2-3 minutes on each side. Serve with peanut sauce (either cold or hot).

Makes for a great appetizer at a party as well as a full dinner served on top of rice.
