1 chicken or 1 large pheasant
3 beaten eggs
4 cups chicken broth
1 can cream of mushroom soup
1 onion, chopped
1 1/2 cups celery, chopped
1/2 tsp pepper
1/2 tsp salt
1 1/2 cups shredded American cheese
4 cups Ritz crackers, crushed
Simmer chicken in salted water until tender. Remove meat from the bones and mix with next 7 ingredients. Pour into 9x13 greased baking dish. Top with crushed crackers and cheese. Bake 1 hour at 350.
