Mediterranean Marinade

1/2 c. lemon juice
1/2 c. extra-virgin oil
1/4 c. dry white wine
1/2 c. green onions, chopped
3 tbsp. fresh oregano, finely chopped
2 tbsp. fresh parsley, finely chopped
1 tbsp. fresh garlic, minced
1 tbsp. fresh thyme, finely chopped
1 tbsp. dried mint (optional)

Whisk all ingredients in a medium bowl unil blended. Makes 2 cups; enough for 6 pounds of chicken, fish, lamb or pork.
